Recipe by the Medifast California Roseville Staff
Ingredients:
- 1 packet Medifast Oatmeal
- ¼ tsp cinnamon (you can add/change as you wish)
- 1-2 packets Splenda sweetener (your preference)
- 1/3 cup water
- 1/8 tsp baking powder
- ½ tsp vanilla extract
- 2 tsp pumpkin pie spice
Instructions:
- Mix all the dry ingredients together.
- Add water and vanilla extract and stir until moist.
- Set aside for 5-10 minutes to allow ingredients to achieve appropriate consistency.
- Place batter on greased cooking pan and bake for 10-15 minutes or until slightly browned, with softer consistency.
Cheesecake Icing with Medifast
While your Pumpkin Bake is baking, prepare the cheesecake filling:
Ingredients:
- 3 oz of non-fat cream cheese
- 1 packet of True Lemon
- 2 tsp of Splenda, or to your taste
Instructions:
- Cream mixture at high speed with a hand mixer until fluffy.
- After Pumpkin Rolls cool, divide cream cheese batter equally on the top of the 3 Pumpkin Rolls.
- Keep refrigerated.
Equivalent:
3 Medifast meals, plus each serving counts as one ounce of your daily lean portion, so don’t forget to subtract it!
